Injury and my come back

Ever since the Monday after my Glow Run and running with my friend, I had a weird pain on the outside top edge of my foot. I would get it loosened up and then it would feel a little better... until I sat down for too long, or ya know, went to bed and woke up the next morning. About a week and a half later (last Thursday), it finally felt better!!

I was so excited!! I went for a run Thursday, Friday, Sunday, Monday, Tuesday. I felt like a new woman... no seriously, I did. It was so weird. Thursday was treadmill day and I ran 3 miles on the treadmill and another 1 mile on the elliptical. Friday I ran 3.1, Sunday 3.26, Monday 4.02, and Tuesday night a whopping 5.23.  I would say I am feeling better :)

One view from a "new" park I ran to. I say "new" because it is a well known park in the area, I have been past it before, but never run to and in!! My heart was so happy looking out over the river.

I actually made these on Monday evening after my run.. tuna salad (made with smashed avocado and not mayo) on top of honey wheat english muffins, topped with tomato and peperjack cheese. YUM!! 


This was dinner tonight. We are pretty low on groceries.. which won't happen until Saturday morning due to other plans (oh, life) and so I made up some quinoa in my rice cooker while I worked out in my living room (did someone say, multi-task??). When I was done, so was the quinoa. I shredded some zuchini, mixed it with quinoa, and stuffed that little tomato. I added some red sauce to the top, some cheese, then an italian spice mix and crushed red peper for a little punch. Bake for 10-15 minutes at 350 and bam. Dinner is served. 

So that's what I have been up to and why there hasn't been much going on over here in a while. I was down for the count (kind of) and family visiting in town too (so super fun and awesome!!) which left me not wanting to sit and write a darned thing.
